When servicing pivots and bearings, it's best to remove the old grease. And while you may think that the old grease is still good it doesn't have to be like that. Other thing is, you are ready to re-grease it – best to do it... even when the grease looks good....
Removing the old grease removes the old contaminants. Wipe the components down with a clean shop towel and use solvent or contact cleaner where appropriate. When a pivot is cleaned with solvent, it needs to be air-dried or left to sit overnight. If the solvent isn't dried out, it will dilute the grease and hinder the protection of the fresh grease.
